Remove manual hand-written *Swagger classes used only for annotations

    Description

      Fineract is full of many many *Swagger classes which have been hand-written by a GSoC student (painfully, wow) because the original code typically uses a String apiRequestBodyAsJson parameter - which Swagger doesn't know what to do about.

      We should investigate if that cannot be replaced and written more modern.

      It's something we likely should do gradually - start small, then rince & repeat.
