[FINERACT-1138] Swagger UI should run "try it out" queries against the server where it is hosted

Description

Currently Swagger UI executes all of its queries against demo.fineract.dev, and there is no possibility to change the "server" in the server dropdown. This should be changed so that you can run Swagger UI (by default?) against the server that it is being hosted on.
