Upgrade Calcite to Avatica 1.25.0

Also, as mentioned in comments for CALCITE-6053

When the upgrade happens there are going to be some test failures in SqlOperatorTest (CALCITE-5923) highlighting the part of the code that needs to be updated. We left some comments to aid the cleanup.
