[YETUS-502] Single quotes confuse mvn site

Description

For some reason, HDFS-9648's usage of a single quote in the summary screws up maven site. Originally, it was a Ux2018 character, but after swapping that out for a single quote, it still failed. We need to escape single quotes to avoid the problems.
