better document how to set JAVA_HOME in docker mode

    Description

      We should document that in Docker mode, users should set an explicit JAVA_HOME with --java-home if they don't want the system to pick one automatically. This can be very surprising to users if they give a multijdklist and seeing a different one getting added.
