[UIMA-26] Incorrect paths in example descriptors and the adjustExamplePaths scripts

Description

Fix these to account for the fact that examples are no longer under the "docs" directory.
Also "IBM" should be removed from paths (i.e. c:\Program Files\IBM\uima).
