[UIMA-2555] Logging messaged from ExtendedLogger always carry wrong source info

Description

The new uimaFIT logger API makes code writing simpler, but currently all the logging messages claim to be logged from ExtendedLogger - instead the method/class that calls ExtendedLogger should be logged.

Fixing this issue depends on UIMA-2375 being released since uimaFIT shouldn't depend on snapshot versions of the core.
