[UIMA-2133] SimpleServer tests are failing on Windows - they have a dependency on new-line and svn:eol-style native broke the tests

Description

Fails on Windows, because newlines are now 2 chars long, and test is expecting 1 char. Change the svn:eol-style for the test data to use 1 char forms of new lines.
