create tika docker image for tika-grpc

    Description

      now that the tika-grpc branch has been merge to main, we need a tika-grpc server image. 

      i thought for a bit about using the same tika docker image as we already use but that is probably not a good idea because there are vastly different jar files needed for tika-grpc
