[SAMZA-172] Update TestStatefulTask to have one system

Description

As part of SAMZA-166, we had to add two systems to TestStatefulTask. We needed auto.offset.reset=largest for the changelog stream and smallest for the input stream. We only need one system once SAMZA-157 goes in, since we can do stream-level defaults at that point. We should update the test accordingly, once SAMZA-157 is committed.
