[PDFBOX-5855] Fix last step of the build process

Description

The changes of PDFBOX-5789 and PDFBOX-5699 led to an issue with the last step of the build process. In the end I had to collect the artifacts and generate the checksums manually. That wasn't a big deal but it looks like there is some issue with the checksum files.

However, I'm going to re-establish the parent subproject to ensure a correct order of the build steps.
