Add endpoint override property to S3 processor integration tests

    Description

      The S3 processor integration tests don't expose the endpoint override so they currently only work with AWS vs. any S3-compatible service. Allowing the endpoint override would make it possible to test against other S3 API implementations as well as make it easier to do more rigorous testing locally, e.g., using something like Minio.
