[JCRVLT-692] Run ITs with minimum and maximum Oak version

Description

Currently the ITs are executed against JR2 and Oak (newest version). It would be helpful to run the integration tests the newest Oak versions in addition. This requires refactoring as outlined in https://maven.apache.org/plugins/maven-jar-plugin/examples/create-test-jar.html#the-preferred-way and in addition dedicated modules for executing the ITs with either

1. Oak min
2. Oak max or
3. JR2
