[HDDS-5933] Ozone Filesystem shaded jars include unnecessary dependencies

Description

I noticed there was a significant size increase in the binary tarball for this release vs the last one: 267mb to 389mb. The main contributors seem to be the ozone-fileystem-hadoop jars, which each increased from 42 mb to 91mb. Within these jars, I see that in 1.2.0 we have rocksdb artifacts that were added to the jars which were not present in 1.1.
