[FLINK-5430] Bring documentation up to speed for current feature set - ASF JIRA

The documentation is still lacking in many parts that were developed or changed since the 1.1 release.

I would like to fix that for master and release-1.2.

This is a parent issue, let's create sub issues for each respective component and feature that we want to document better.
