[FLINK-27510] update playgrounds for Flink 1.15

Description

All of the playgrounds should be updated for Flink 1.15. This should include reworking the code as necessary to avoid using anything that has been deprecated.

It would be best to first perform the updates for 1.14, so that APIs newly deprecated in 1.14 can be fixed first.
