[CONNECTORS-925] ant exclusions described in the build do not seem to work the same on the Mac as on Windows

Description

The ant exclusion expressions for generating source packages and binary packages seem to pick up unwanted stuff on the Mac. For instance, the dist directory, the lib directory, src/fonts, are all present and yet are explicitly excluded in "ant image".
