Description

1.) The docs discuss adjusting file_cache_size, which is a DSE holdover, and should be removed from the OSS docs. SAI uses MmapRebufferer, which doesn't touch the chunk cache.

2.) The docs for SAI's metrics include a handful of scopes that no longer exist and should be removed. (ex. OffsetFetch, TokenFetch, etc.)
