[AMQ-7433] Use short rendering of exception/throwable in log by default

Description

Right now, the main data/activemq.log log file is "polluted" by full stack trace rendering.

It causes lot of noise and should be configured by the users.

By default, I will change the throwable rendering to short instead of full. The user can always enable full if needed.
