[ACCUMULO-3827] Default store types for monitor SSL are broken

Description

Not sure why I left the default types an empty string, because that doesn't actually work. They should be "jks". A workaround for 1.7.0 is to set the monitor.ssl.keyStoreType and monitor.ssl.trustStoreType properties explicitly.
