[SOLR-9449] Do not index _version_ field in example schemas because the field has DocValues enabled already

Description

SOLR-8740 enabled doc values by default for most non-text field types. As a result, version field is now both indexed and has doc values.

I propose to make version field doc values only by default and remove the indexed=true set in all the example schema files.
