[SAMZA-660] Default serdes do not work for changelog streams

Description

SAMZA-554 introduced default serde names for common serdes like byte, string etc. However it seems these names are not usable for changelog streams. So for example if I have the following config I still need to explicitly declare the "string" serde:

stores.<store-name>.key.serde=string
