Description

We currently support Python 3.6 upwards; this is an old and unsupported version of python pretty much everywhere.

In particular some of the CI systems no longer even have this version which is causing some build failures.

Let's change the supported versions to be 3.8 and up which covers pretty much all supported LTS versions of Ubuntu (20.04, 22.04)
