[NIFI-6963] ValidateRecord treats missing required array as valid

Description

ValidateRecord does not mark a missing (but required) array field as invalid. This is caused by the missing field being issued an empty array as a default value, even if one is not defined in the schema.

If no default value for an array field is specified, then the default value should be null rather than an empty array.
