Add zip goal to create a source zip containing all sources

    Description

      Currently the source jar and test jar goals only contain certain parts of the project directory structure. It would be helpful to have a zip goal that would create a zip of the entire project structure (i.e. everything except for the target directory). This would allow any release to easy be downloaded and re-built from the original sources without needing to check out from the tag.
