[KARAF-2381] The shell log:set command not as documented

Description

Running the shell's log:set LogLevel PackageName command makes the change persistent in contrary to the documentation.

On the flip side log:set DEFAULT PackageName is not persisted.

So, the log:set command should either:

• make log:set DEFAULT PackageName persisted (and fix the documentation), or
• make log:set LogLevel PackageName not persistent (as documented).
