[KAFKA-7834] Extend collected logs in system test services to include heap dumps

Description

Overall I'd suggest enabling by default: 
-XX:+HeapDumpOnOutOfMemoryError -XX:HeapDumpPath=<file.bin>"

in the major system test services, so that a heap dump is captured on OOM. Given these flags, we should also extend the set of collected logs in each service to include the predetermined filename for the heap dump.
