[HIVE-17088] HS2 WebUI throws a NullPointerException when opened

Description

After bumping the Jetty version to 3.9 and excluding several other dependencies on HIVE-16049, the HS2 webui stopped working and throwing a NPE error.

HTTP ERROR 500
