To replicate:

CREATE TABLE separator_test 
ROW FORMAT SERDE 'org.apache.hadoop.hive.serde2.OpenCSVSerde'
WITH SERDEPROPERTIES ("separatorChar" = "|","quoteChar"="\"","escapeChar"="
") 
STORED AS TEXTFILE
AS
SELECT * FROM sample_07;

Then

hadoop fs -cat /user/hive/warehouse/separator_test/*
"53-3032","Truck drivers, heavy and tractor-trailer","1693590","37560"
"53-3033","Truck drivers, light or delivery services","922900","28820"
"53-3041","Taxi drivers and chauffeurs","165590","22740"

The separator is till "," not "|" as specified.
