[HDDS-6081] Fix ReplicationConfig related test failures that happened due to merging HDDS-5997 to the EC branch

Description

During the merge of HDDS-5997, there are failures in rooted ozone fs related tests, due to ReplicationConfig#adjustReplication method.

In order to fix it, adjust ReplicationConfig tests to have EC related test runs as well, and test around the expectations towards adjustReplication in case the base ReplicationConfig that is adjusted is an ECReplicationConfig.
