[FLINK-18482] Replace flink-training datasets with data generators

Description

It will improve the experience for those doing the flink-training exercises if they don't have to download and configure the taxi ride and taxi fare datasets, and it will allow us to delete some rather ugly code. This will also remove this dependency on these external datasets.
