[BEAM-10912] Increase Jenkins job logs retention

Description

Recently Beam was moved to a dedicated Jenkins Master. That means the change in https://github.com/apache/beam/pull/7410 could be reverted. Instead of fully reverting that change, the current need is to increase the retention of post-commit job logs to improve our ability to track failing tests in both the Test Analyzer Plugin and future improvements for the community-metrics Test Status dashboard (BEAM-10909).
